Did they remove them because i tried so many maps with the xray glitch and can't find strongholds. Only mineshafts. If you know any seed with them, please tell me!

I just got the game recently and I want to try out some mini games. I know how to put custom maps but I don't know how to actually play he mini game itself. I want to play the hunger games especially.
So um i don't know how to make paper in minecraft, xbox edition. I know its made from sugar canes i have them in my inventory already but i don't know how to make the actual paper. So how do i make paper from the sugar canes? I'm trying to make a map. Keep in mind its the xbox edition so i can't craft anything.
