Cause you enjoy it a lot

Minecraft can be very intriguing with it's open-world gameplay with some real-world rules (you need to eat periodically to survive… You need to defend yourself against hostile creatures, ESPECIALLY at night… Ect.) that people can easily get into.

From that framework, you're practically free to do whatever you want within the game. While some will want to explore the world & eventually defeat The Ender Dragon (which is the game's "natural" endpoint). Others want to do some creative works & craft the world as they see fit.

There's also various mods for the Java version that can add content that Mojang isn't willing to implement (like highly technical or magical content) which can give potentially endless gaming possibilities.

Such openness in gameplay practically appeals to your compulsions to play the game. HOWEVER, this is just general speculation on my part as only you know why the game appeals so much to you.
