How to switch Minecraft updates?

This may sound strange or confusing. I just got the update for 1.8 and I didn't even download it, it done it automatically. I want to play on a server which 1.7.4. Is there anyway to go down a update if you know what I mean. I want to play on Mineplex

In the launcher click edit profile then select a release version from one of the drop down menus.

In the bottom left of the MC launcher, click the button labelled 'Edit Profile'. Another window should pop up. From there find a dropdown called 'Use Version'. Click that and select the version of Minecraft you want. Then just click the 'Save Profile' in the bottom right. Hope that helps!
