Minecraft is an Infinite world. Unless there's a border that the server owner sets, anyone can travel forever.
If you travel far, there's a less chance that the person could find you.

Depends on where the Map came from.
The vanilla map just shows the local area. It doesn't actually do things like locate players, but it will show above-ground structures or possibly digging pits. He has to be close to you before he can actually take advantage of this though.
