I was think that maybe I could copy my server files from my computer onto my USB Flash Drive, and plug it into my router then use a batch file to automatically run my spigot server from the router. I would use the remote client to control it as well. For updates, I would unplug it after stopping the server, and update it from my computer. Is any of this possible?

It needs to execute code on the server machine so it must be compatible with the operating system and have enough resources ie processor power and memory. Unless you're using a computer for a router the answer is no.
