Every youtuber that I watch has a guide of all the minecraft items on the right of the screen and when they click on something, it shows them how to make it. You can also search items in it too. I don't know if it's a mod or a setting, but I need help figuring out how to be able to get it.

It's a mod. I'm sure there are plenty of them available. I don't play so i won't make a suggestion, so just look it up yourself.

It's a mod. It's called "Not Enough Items". If you want to get it then you have to download forge client, code chicken core and the mod itself.

The guide along the left is a mod. There are several of them now which basically do the same thing. Not Enough Items, Too Many Items, Just Enough Item, etc. Which ones are available depends on the version of Minecraft you are playing.
I always use mod pack launchers such as Curse or the Twitch app to download bundles of mods for me, but the individual mod description has stand-alone installation instructions.
