I been noticing how some pictures on google with minecraft have clear smooth realistic water, with really nice shadows, and so on.

It would depend on the software used, the computer/game system you're using and also the speed of your computer. A texture pack for example might be able to assist you, usually though the pictures you see have some touch ups done to them. Hope I helped!

What you're seeing is a mod called shaders. But if you want to run it, you'd need a really beefy computer.
