I'm new to the whole server thing. All servers I've ever tried to join are garbage with unnecessary aspects like economies and whatnot and you can't break any blocks and that kind of stuff

Plugins can add a lot of useful features to Minecraft servers if they're added sparingly and logically. Maybe the servers you've been going on were using too many plugins or even just plugins that didn't work well together.
Plugins like Economy and Factions are very popular and you may like them once you get the hang of multiplayer. Also, anti-grief plugins that prevent you from breaking certain blocks are very useful for members of a server to feel safe. There's a lot of trolls on MC, so things like this help servers sift through players for a better community.
