Have player two hold down the center x and than join as guest or on another live account. If it doesn't work in the middle of the game, leave the game and do it at the start menu of mine craft. My cousins ask this too lol!

You have to have a HDMI cable plugged into your Xbox and TV, the blue, white and red wires won't work. But if you have a HDMI cable do what ruggedy said.
