I don't have a capture card or anything to screen record minecraft video for you tube, so then I thought maybe I could connect my 360 to my one and then just record of that. Is this possible?

No. How are you planning to connect the Xbox 360 to the Xbox One? Also an Xbox 360 doesn't work as a capture card.
