I'm thinking of starting a Minecraft Let's Build series, but I don't know what to build.
Any ideas (EXCEPT a castle)

Why would you start a series on building if you don't even know what you'd like to build in the first place?
Anyway, about everything has been done a million times now, but if you can put an interesting twist on pretty much anything people will like it.
1) Different varieties of houses usually go down well. Many players search this, as building a house is the first thing people do. You could do modern, roman style etc. Other ideas include:
2) A bell tower
3) A stable
4) A bank
5) A cathedral
I also recommend asking your viewers to comment on what to build next, as it will increase comments and give more interaction for your viewers and more builds for you.
