Weird Minecraft PC glitch?

I'll break blocks or change a sign and when I go to play the game again (Quite the application and reopen) it goes back to the way I had it before. I had this issue before but it oddly just fixed itself after a while. It only happens in a certain area on my world. Any ideas?
