When i sign in to my PSN, it keeps me logged in on everything but when i start minecraft it signs me out every time, i've turned my ps3 off and on again but it still signs me out, does anyone know how to fix this or why it is doing this?

Change your password that should sort it out. Many people including me have had this problem.
