I'm thinking of buying a second ps3 for when the nieces come over as they are cheap enough nowadays and would like to let them play on the ps3 upstairs instead of hogging the tv downstairs while they play minecraft. I also have didital copies of wipeout and sonic adventure they would like to play.

I've never done this as I don't have another PS3, but it is possible. On the second PS3, you sign in to the PSN ID that was used to purchase the games. They should appear in your "downloaded" section. You download them, and you should be good to go.
Sony doesn't really like this, but it can be done.
Follow this tutorial: Just don't gameshare with other people apart from your own consoles. This is technically against Sony's terms of service.
