Is this graphics card good enough, and if not how much dedicated memory do I need?

I recently decided to try to get into PC gaming before I go off to college. The problem is the one thing I never bothered to learn about computers was how graphics cards work. The only things I know about graphics cards are: on board graphics are awful, NVIDIA makes the best of the best graphics cards, and more dedicated memory is better.

The laptop I'm looking at has a NVIDIA GeForce GT 735M graphics card (2GB dedicated graphics I believe).

Games I would possibly play on it are:
- Star Wars: Knights of the Old Republic
- World of Warcraft
- Minecraft
- Starcraft
- Guild Wars 2
- Elder Scrolls Online
- Zoo Tycoon
- Roller Coaster Tycoon

Also I'd like to have the option to play newer higher budget games like Watch Dogs. Would I be able to play games like that or just the ones listed above?

If you want to be Really nice you could also give a brief explanation of how graphics cards work and what's important in one and what isn't, but that isn't necessary.

Well the mentioned games can easily work on your laptop but it isn't always about the graphics card. High graphics games depends on Cpu performance ram and graphics card as well. Your Graphic Card is a decent one and can run future games on your laptop but, keep in mind - you won't be able to play all the games on high settings.
Well if you are deciding to invest in something then rather buy alienware laptops.
you won't be able to play watchdogs without lag on that graphics card

All the best

Explaining what makes a good graphics card can take up a lot of space. Basically, the more shader processors the better, also important are the clock speeds, bus speed, type and amount of memory, DirectX version, etc.

The GT 735M is a mid range device that will allow you to play most games with decent frame rates, though you may need to reduce the monitor resolution and/or in-game settings in order to achieve them.
Here's a link for the GT 735M, it gives a rundown on it and if you scroll down it lists the frames rates that you can expect in various games at the listed settings.

This is a link from the same site that ranks mobile graphics devices based on performance. The GT 735M is currently ranked at 118.
