How to make a saddle in minecraft?

Saddles are items in the game; they are uncraftable, being found only in chests, inside dungeons, abandoned mineshafts, Nether Fortresses, Desert and Jungle Temples, in blacksmith chests found in NPC villages, or by trading with a villager. Also, saddles can be "caught" with a fishing rod.

They took the crafting recipe out of the game. You either have to find one in a dungeon, or spawn one in.

Saddles don't have a crafting recipe. You can get them inside chests of dungeons, abandoned mineshafts, Desert and Jungle Temples, NCP Village Blacksmith Building, and a Nether Fortress. You can also either trade with a villager for a saddle or catch a saddle with a fishing rod (helps if you get Luck of the Sea enchantment).

You can't craft a saddle. You must find it in a spawned-in chest, such as the ones that appear in villages and dungeons.
