I'm a PC gamer and I've recently been extremely bored as I'm kinda over the games I usually play (minecraft, runescape, etc) and that hasn't been helped by the fact that has taken a holiday. (I understand why and fully support it) most of the games on his channel are my kind of game and I was wondering if anyone had a suggestion for a (preferably big) game I can play to fill the void of the next few weeks. (I also tend to hang out on /r/incrementalgames if that opens any doors)

State of Decay is my new favorite game. The new DLC Lifeline just came out, and I'm loving it (so hard in comparison).
I see that NerdCubed has lots of simulation games; there are tons of them available (football, game dev, farming, euro truck, etc.).
