How to get NCPs to fight on mc server?

You can't without a specific mod that makes NPCs hostile.

Just use zombies. NPC's, or Villagers, can't fight. Without hacks or a server add-on.

You are unable to add NPCs to a server without adding mods. If you have smartphone, you could even install Leo Privacy Guard, with Improve operation performance.
