I reckon that horses are not going to come to Xbox Minecraft for another good 1-2 years, due to the fact that not even anvils are the game yet, which were a pc update about 6 months ago. I'm as annoyed as you are, but the Xbox version is a load further behind the pc version, because it was made years after the pc.
