Um, I'm not really sure about any seeds, but if your version is updated, you can choose the Flat World option when creating a seed. It might not be exactly what you are after but it is really good if you want to make some epic structures.
Just have a quick google and see if anyone has any, I just googled a seed for a good Desert map and I ended up getting a map that is just plain desert and a little bit of forest area.
