Skyrim is better for the whole exploration and fantasy realm
Minecraft is better with friends and creativity and just colorful fun.
Your question has no REAL answer, these games are so far apart that it's impossible to compare.

Skyrim is a far better quality game.
Their's 10,000x more content. It has complex quests. A massive fixed map. 100s of quests. A "real" levelling system. Amazing graphics. Speech!
Mincraft is considered by some as more fun due to how creative you can be on it.
