What is a MineCraft seed great for building?

For building, what is it that you want to build? Do you want to build a mountainside cave? An underground facility?

Right now, the best seed is the superflat preset called 'Overworld'. Remember to delete all the strings from the preset to present any building from spawning.

Of course, it all depends on what you want to build.
