How do you play as a different minecraft skin in offline mode?

I often play minecraft offline and am not very fond of the default skin, however changing skins from your account does not carry over to offline mode for some reason. I've tried methods such as replacing the 'steve' image in the version folder and deleting the meta folder but that only causes the launcher to delete the version .jar and download a new one.
Any ideas please anyone?
