How well could a Raspberry Pi host a Minecraft 1.7.9 server with a max of three players? Would it run fairly smoothly with so few players? The world files would be created and then put on the Pi so that it wouldn't have to generate them.

It should be fairly smooth as its for 3 people. But depends what OS is on it. What you running? I had a really old pc and that managed 7 people on my server
