I want to start a series on my YouTube channel where I will build an awesome massive theme park thing!
But if I do this in survival it will literally take years! I was planning to do a survival series anyway (on another world) but will people watch this if it's in creative?

If you make the commentary interesting and fun to listen to then the viewers probably will, don't just do it blah blah blah placing blocks, interact with them, do stuff wrong on purpose so you have something to talk about. Lets Play and Lets Build are two different things though!

Maybe, maybe not, but you will get a LOT more credibility (and views) if you make it in survival. After all, like you said, it would literally take years to build, so that would give you basis for a very long-running Minecraft series.
Just to be safe though, if you can, do it on a server with protection from fire, explosions, etc. So you're not in as much danger of losing your work.
