Any music suggestions like the Minecraft OST/FEZ OST/Starbound OST?

I think those are fairly minimalistic.
Not sure if it's your taste, but try the artist "William Orbit". He's done some pretty good pseudo ambient tunes.

You can also try Steve Reich's music, which has a more classical feel. I'd recommend the pieces "Eight Lines (Octet)" or "Music for 18 Musicians" by him.
