So I try to download bukkit plugins but I get the error unsupported version.minor.51.0 or 52.0. I looked it up and it said something about java 8 and java 7 and I'm on java 8 and when I check in terminal it says java version 1.6.0_65

You are not on Java 8 if terminal says the version is 1.6.0_65, that is an old Java 6 version. Sometimes when you install Java updates it will ask if you want to remove old Java versions and you should pay attention to that, or remove old versions yourself from Uninstall Programs.
Also not sure about Win10, but the default Internet Explorer in Win7 was 32-bit even in 64-bit Win7, so if you automatically install from IE you might only have the newest 32-bit Java, but not 64-bit Java which you may need to install or update manually.
